1 Minute Mug Cake

I don’t know about you but I like to end every meal with a little something sweet—Dove dark chocolate, a small handful of chocolate chips, whatever! I also have no self-control so I can’t keep cookies, cake or anything like that in the house. My theory is I’m going to eat it all anyway so why not just eat it all in one sitting? Not good ha! A long time ago on Pinterest, I stumbled across a pin for this. What’s not to love about a low cal dessert that takes less than 2 minutes to make?!

In the midst of our move/unpacking, there is nothing in our fridge. I've been craving something sweet all weekend and this week so it was time to figure something out! I picked up an Angel Food Cake Mix and a Triple Chocolate Fudge Cake Mix from Walmart after work. When I got home I went through my temporary “kitchen” to find something to store the mixes in. We’re in the process of painting our kitchen cabinets so this is my life right now. Tell me it’s all worth it…

Anyway, I dumped the mixes together…very complicated recipe we are working with here! My mother in law is in town helping us work on our new house so I was nice enough to make her a little mug of cake too :)
 
I put three tablespoons of the cake mixture into each mug and then added 2 tablespoons of water to each. I also dropped a couple of chocolate chips into each mug for good measure, good luck, whatever you wanna call it. I microwaved each mug for 1 minute and then added a scoop of fat free Cool Whip on top.
Note to self...become a better photographer!
The result? Pretty good! Two thumbs up from both me and Kim. The texture is a little sponge-y/interesting but it tastes good. It’s definitely not the texture of a brownie or cake. It's also not super rich or heavy. It’s hard to describe but it's worth giving it a shot. If you’re like me and need a little something sweet after dinner, this is the way to go. It’s easy, low calorie and takes no time at all. Try it out and let us know what you think!
