Dustin's Potato Cookies

Time for another recipe! This one is courtesy of my husband, Dustin--a.k.a. Easy D, Delicious, D, and probably a few more nicknames that I'm forgetting. Oh and my sweet Granna calls him Jason or Justin...close enough, right?


Last year we stumbled across this recipe from The Pioneer Woman. Go check out her website right now if you've never been to it.

Ok, back to the recipe. Ree calls them Crash Hot Potatoes; we call them Potato Cookies. Whatever you call them, they are amazing! Here's what you need:

-small red potatoes (cook as many as you want to eat--I won't even tell you how many we eat at a tima ha!)
-olive oil
-salt and pepper
-whatever seasoning you like (we like to use italian seasoning)

First things first, you need to give the potatoes a good wash and scrub. Don't know why I felt the need to document this but I did...so go with it.


The next step is super important--cut an "x" in each potato with a fork. Trust me people, we are experts when it comes to Potato Cookies (when I say "we," I really just mean Dustin).


Why is this important? I don't know because I've never actually made this recipe. I just eat it haha! Potato cookies are D's specialty--he says the "x" is important because it helps the potatoes smash/squish better.

Next, you need to boil the potatoes until they're soft. While they're boiling, pour some olive oil onto a jelly roll pan and preheat your oven to 450 degrees. Once the potatoes are cooked, spread them out on the pan. Then use a potato masher like this one to turn them into "cookies."



Brush each potato (generously) with olive oil and get to seasoning those guys. Like I said earlier, we use salt, pepper, and italian seasoning.


Once they're all seasoned and ready to go, stick them in a 450 degree oven for 20 to 25 minutes. D says to make sure you put them on the top rack. It might take a little longer than that though. You'll know they're done because they'll be all golden and crispy. Here is what they should look like:


And that's it! These things are SO good and pretty easy to make. Make these to go with dinner one night this weekend (or next week) and let me know how they turn out! Try smothering them in ketchup :)

  1. Oh man, I love baby red potatoes so much. I make them steamed with olive oil, salt and pepper and seasoning, but crispy out of the oven???? I die. Mmmmmm.
