Saw It. Pinned It. Did It.

Happy Thursday, Y'all!  I hope everyone is having a great end of the week!  We are so close to the weekend I can feel it.  Since it is Thursday, we're linking up with Katie and Steph again for Saw It. This week's pintest (new word. count it!) is in the form of a recipe... mmm!  Apparently, I was a REAL LIFE domestic diva (yep, threw off the training wheels and really kicked up it a notch) last night!  I decided to try making some Chicken Alfredo Lasagna Roll Ups.  I found the original recipe here.  I borrowed some elements from here.  Lemme just tell you, this was a culinary adventure if I've ever had one!  I ended up combining a few recipes and making some stuff up as I went... these turned out AMAZING!!  Here's what I did:


Gather ingredients:
Tyson Already Grilled Chicken Chunks (Frozen) 
Lasagna Noodles
Ricotta Cheese
Shredded Parm Cheese
Shredded Italian Cheese
Italian Seasoning

In the original recipe, you'll notice Artsy Fartsy Mama makes her own alfredo sauce.  I find homemade alfredo sauce to taste so much better than the jar stuff; so if I have time, I make it!  This was a little different than how I'd done it before.  So I thought, "Well, if I'm already trying something different, I'll go all out!"  I remembered I had a pin for a copy cat of Olive Garden's Alfredo Sauce.  Turns out, the two were almost identical!  The only difference is garlic powder and garlic (fresh).  I used fresh... well the fresh jarred kind :)  I love that stuff!  

Ingredients for Alfredo (1/2 the recipe in the pin):
1/2 Stick Butter
1/2 pint Heavy Whipping Cream
1 clove garlic
1/2 cup shredded Parm 
1 Tbsp ricotta (I used instead of cream cheese... turned out I was out!)


Now with that tangent, let me just show you how things were goin' down in this Domestic Diva's kitchen.

- Cook up the chicken chunks.  I threw some Italian seasoning in for good measure.  I had to go to the store after work, and I'm so glad I went w/ cooked/frozen!  Saved me a lot of time :)
 
- Get your water boiling for lasagna noodles. I ended up doing 8 noodles. 

- Start the alfredo sauce.  Throw in butter and garlic.  Let the butter get all melty. 

- Add ricotta cheese.  Mix that all up til combined. 

- Mix in heavy whipping cream. Let that cook til it just starts to bubble.  



- While you're letting that heat up, grab your cooked chicken and toss it in a bowl.  Add in a few tablespoons (I think I ended up doing 3) of ricotta cheese and some Italian seasoning.  I just did this to get a nice thick paste. 




- Mix that all up. By now, your alfredo sauce should be ready to bubble.  Mix in your parm/Italian cheese.  Stir til its nice and thick. 

- Yes... it smells delicious! :) Oh yes - you don't want to forget about your lasagna noodles!  They should be nice and cooked now.  Drain them and rinse with cold water.  Lay them out on a cookie sheet and pat them dry with a paper towel. 
**Note to self - the instructions say to dry them so they're easier to work with.  TRUTH!  So next time... dry BOTH sides :)**

- Spread just a little alfredo sauce on each noodle. You'll notice I also put some alfredo in the bottom of my greased 8x8 dish. 

- Now lay down your chicken/cheese mixture. Sprinkle more Italian cheese on top for good measure!

- Now, roll those bad boys up.  You'll want to make sure you lay these in the dish seam side down.  Cover with some alfredo and shredded cheese.  If you haven't noticed, this has lots of cheese!  This is NOT the dish to go all fat free on :)  

- Cook in the oven at 350* just long enough to get everything melty/bubbly.  Mine took about 15 min. 

BOOM!  You have a DELICIOUS homemade meal!  You could totally add some spinach/veggies/whatever to this and make it all your own, too!  It did take me about an hour to do from start to finish, but it was so worth it!  These were smelling so good, they didn't even last long enough in the dish for me to get a picture.  Sorry :)  Just trust they are amazing!
